Whoopie Pies with Vegetarian Marshmallow

 

I've been trying to get back into baking recently, and the abysmal weather we've been having has definitely inspired me to get baking treats to have curled up in front of the fire over the coming months.

Baking is one of my favourite things to do, but I sometimes feel a bit limited in how creative I can get with it, being a vegetarian. I've wanted to try making Whoopie Pies for ages but as I thought marshmallows were the main ingredient for the filling, I didn't think it would be possible. However, after a little research into Marshmallow Fluff online, I was amazed to find out it is completely veggie-friendly. It doesn't contain any gelatine whatsoever, but uses Corn Syrup instead - hooray! I hadn't even thought about using it before as I just assumed it wouldn't be - which just goes to show you shouldn't always jump to conclusions. Upon discovering it was vegetarian I promptly text my boyfriend to go and get me some from Tesco, and on Saturday we set about making some Whoopie Pies!

I've never made or eaten Whoopie Pies before, so I wasn't really sure what to expect, but I'm really pleased with how they turned out. I got the recipe here and it was really easy to follow, the only things I did differently were not adding buttermilk, and using the Fluff on its own as a filling. I realise now why it's probably best to add it to a buttercream mixture, as Fluff doesn't set at all and so you'll find your Whoopie Pies sliding all over the place if you use the Fluff and nothing else. Nevertheless they tasted delicious and I really enjoyed making them.

I'm definitely going to be doing lots more baking over the next few months and sharing the outcomes with you guys. Are there any particular recipes you would like to see?
